Ingredients
For the cake
1cupsemolina flour, 167 grams
1cupflour, 125 grams
¾cupgranulated sugar, 150 grams
1cupvegetable oil, 218 grams
1cupplain whole milk yogurt, 245 grams
2large eggs
2tspbaking powder, 9 grams
¼tspsalt
1tspvanilla extract, 4 grams
For the syrup
¾cupsugar, 150 grams
½cupwater, 115 grams
¼cuplemon juice, 58 grams
Instructions
The cake
Preheat the oven to 350 F or 175 C. Grease a 9 inch round spring form pan, or line the bottom with parchment paper and then grease it. Set aside.
In a large bowl, whisk the eggs, then add the sugar, oil and vanilla, and mix them well.
Add the semolina flour, all-purpose flour, yogurt, baking powder and salt and mix everything together until incorporated.
Bake the cake for about 35-40 minutes or until lightly golden on top, and an inserted toothpick comes out clean. Allow to cool
The syrup
Add the water, sugar and lemon juice to a small saucepan on medium-high heat. Dissolve the sugar completely, and allow the mixture to boil and thicken for a few minutes. Set aside to cool.
Assemble and Serve
Pour the syrup evenly over the cake, or use a pastry brush to brush it on top. Allow the cake to fully absorb the syrup.
